Weekend Update: Dance Competitions and a MARATHON Cooking Session

This weekend sure was a fast and furious one!
All day dance competition on Saturday and all day cooking marathon on Sunday.

Saturday I fell out of bed woke up WAY earlier than anyone should be allowed to wake up on a Saturday, put on my dance competition uniform (colored denim and whatever studio t-shirt the staff has decided to wear that day), and headed over to UTA for a full day of dancing.
Competition started at 7:00am and one of the trios I choreographed was 3rd.  I'm not quite sure how these 9 year olds find the energy to dance their butts off that early but let me tell you, they did a FABULOUS job!  I was very proud of all of my students this weekend but especially my duet that won 2nd overall!

Sunday after sleeping in, I headed to the grocery store to cook for the week.  After way too many a few days of eating like crap, my body has been craving fruits, veggies, and a lot of clean eating.  
I decided on chicken and lots of veggies mixed in with a few carbs.

For the past week I have been following a chick on Instagram who post insanely healthy but delicious recipes so I decided to try a couple out.  She posted a picture the other day about "healthy tortilla chips".  HOLD THE PHONE!  HEALTHY and tortilla chip in the same sentence?!?!  I had to investigate.

They're actually pretty great!  

You take Eziekel Sprouted tortillas, break them into pieces, broil for a few minutes to get crispy and VOILA!  I made a little bit of guacamole for mine and they made the perfect snack today at work!
