Italian(ish) Meatballs

Ever since Whole30 my eating habits have not been what they needed to be.  While I haven't indulged in a bowl of queso yet, I have eaten my fair share of chocolate, french fries and consumed several glasses of champs.  I can already tell that my body hates me and my stomach has been in knots.  This weekend I decided to find a few new Whole30 recipes that I could add to my list.

I make zucchini noodles and homemade marinara sauce every couple of weeks so I have been wanting to find a healthy recipe for meatballs.  I was so excited when I found Primally Inspired's Grain Free Italian Meatballs so I decided to try my own take on them.  They turned out so delicious that I had them for dinner last night and lunch today!  These meatballs are stuffed full of veggies and since they're not fried like other meatball recipes they are a winner in my book!

Italian(ish) Meatballs 
adapted from Primally Inspired


















































What you'll need

  • 1 pound of ground pork
  • 1 pound of ground turkey
  • 1/2 medium onion; diced finely
  • 1 cup mushrooms; diced finely
  • 1 cup zucchine; diced finely
  • 2 tablespoons chopped basil
  • 2 tablespoons oregano
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 egg (if you're egg free you can omit this)
  • red pepper flakes, salt and pepper to taste

What you do

  • Preheat oven to 350 degrees F
  • Mix all ingredients together in a large bowl (I used my hands to mix because I think it works better than a spoon)
  • Shape mixture into 2 inch balls and place on a baking sheet lined with parchment paper
  • Bake for approx 30 minutes or until thoroughly cooked
  • Enjoy!

Weekending: Short and Sweet

Yall how is it Monday AGAIN?!?!?!  Today will be short and sweet because my weekend was mostly uneventful.

Friday night I got to have a little girls dinner with a new friend.  We had an absolute blast having dinner and drinks in Uptown.
Saturday I woke up with the worst stomach ache ever!  Ever since I completed Whole30, my stomach feels like it's in knots when I eat anything that's not Whole30 approved.  I spent Saturday in bed most of the day and was asleep by 9:30!

Sunday I tried a few new recipes which I'll be sharing later this week!  Can I just say meatballs? Yum!!!!!

Weekending: C'mon Sunshine

A couple of weekends ago I went to a fabulous wedding and ended up meeting one of the bride's friends.  Turns out we have a lot in common and decided to grab dinner tonight at one of my favorite places for a little girl talk.  Just look how good this place is!  Also, can I just say how hard it is to meet girlfriends the older we get?

Weekending: Cheers

























































Well Monday here we are once again!  I can't believe we are already halfway through June, time needs to slow down just a bit!  Linking up with Biana today to talk about my weekend.

My weekend started on Thursday night.  Absolut released their new bottle so I was happy to take advantage of the free drinks and fun!

Friday night I switched from vodka to tequila for our work happy hour.  One of the girls on my team set up a happy hour featuring Maestro Dobel tequila and yall, the drinks were SO GOOD!






































After a quick dinner with friends I was definitely in bed by 10:30!  Saturday I got my butt kicked at a workout and maybe thought my lungs were going to explode.  Holy cardio!  I definitely wanted to take a page from Fat Amy's book


I had been wanting to try out a recipe for Dr. Pepper cupcakes so I thought Saturday was the perfect time.  After looking all over Pinterest I found this recipe and headed to the store.  Mine my not be as cute as hers but they did taste yummy!





































I think I didn't add enough powdered sugar to the icing so mine was a little thin.  I'm still learning a lot about baking so if yall have any tips feel free to throw them my way!

Sunday I went to one last work event and headed to Hotel Zaza for their Sunday School party.  Sunday School is once every 3 months and it is a huge party in one of the hotel ballrooms.  I had never been before but always heard it was a blast so when I got offered a ticket for work I knew I couldn't miss it.

When we sat down we were offered carafes and carafes of mimosas and after an hour or so of drinking I knew I needed breakfast.  Thankfully they came out with trays of food.
It doesn't look like much but I promise it was all delicious!  After a few more carafes of mimosas, the staff comes in and takes almost everything off of the tables and then the lights go out!  All of a sudden a DJ starts playing and the staff reappears with bottles of champagne and sparklers that they pass out!  The music is blaring and soon everyone was up on their chairs dancing and waving around sparklers and glow in the dark wands.  It was a blast but at some point I hit my wall and knew I needed to go before the champagne hit me too hard!

Even though I am beyond tired today, the weekend was amazing!

Take Me Out To The Ballgame

One of my favorite things about living in Dallas is sporting events!  Whether it is hanging out at AT&T Stadium watching the Cowboys, cheering on the Mavs, freezing at the Stars games or boiling in the Texas heat watching Rangers baseball, we Dallasites are true fans.  While I may not be able to talk all things sports all the time, I love to go to games and of course tailgate.

Part of the fun of attending these games is deciding what my wardrobe will be.  For me I usually go 1 of 2 ways: sporty or flirty.  I usually opt for flirty because hello, a sporting event is a great place to meet cute guys and because that just fits my style a little more.  Fun fact: the first time I went to a Rangers game was on a date! In the summer, going to a Rangers game means sitting out in the heat and sweating unless I am lucky enough to grab a covered seat or even better, a spot in a suite (anyone know how to make that happen because THAT would be great).  Things like doing my hair, are a wasted effort for those games because it's just going to be a sweaty mess!  So what is a girl to do?









































Enter Fanatics!  Fanatics is one of my favorite places to shop for any of my Dallas team apparel.  My favorite Mavs shirt came from there a few years ago and is still in great shape. They have a great selection of hats for the summer and when I was asked to create a couple of outfits around one I just couldn't say no!  I chose the Cooperstown Fitted Cap because I love the throwback design and the vintage logo.  I tried to put together 2 completely different looks that can easily go from the tailgate, to the game, to going out afterwards.  Hope yall like them!

Cheers *Clink* Wednesdays: Kaffir Lime Bloody Mary

Is it just me, or is a big drink needed today?  Thank goodness there are only 2 days left of this work week!

Yall may not know this about me but one of my favorite cocktails to drink is a Bloody Mary.  I have perfected (if I do say so myself) my Bloody Mary skills over the years and thought I had it down pretty great.  Yall also may not know that I LOVE anything citrus!  I am seriously happy to divide a lime or lemon into quarters and suck out all of the juice - I know, my dentist already yelled at me for it.  So imagine my excitement when someone told me about adding a lime vodka to a bloody mary?  Both things I love in 1 drink?  Sign me up!

Introducing Hangar 1 Kaffir Lime Vodka

This vodka mixes with almost anything and is perfect for summertime!  See the recipe below for the ultimate summertime Bloody Mary.

Kaffir Lime Bloody Mary

What you'll need:
  • Hangar 1 Kaffir Lime Vodka
  • Zing Zang Bloody mix
  • olive juice
  • olives
  • worcestershire sauce
  • Frank's Red Hot sauce
  • garlic salt
  • pepper
  • 1 lemon
  • 1 lime
  • tall glass
  • ice
What you do:

Put ice into a tall glass.  Add a dash each of garlic salt, pepper, Frank's Red Hot sauce, worcestershire sauce and olive juice.  Pour in 2 shots of Kaffir Lime Vodka and fill the rest of the glass with Zing Zang.  Squeeze 1/2 of a lemon and 1/2 of a lime into the glass.  Shake and pour into a glass with fresh ice.  Garnish your cocktail with a few olives, a celery stalk, a lemon wedge and a lime wedge.  Enjoy!

I ran out of lemons and limes but it was still yummy!

Weekending: #Hendricksfurrever

What a weekend!  I swear it's going to take me a whole week to recover but it was so worth it.  Let's get down to it, shall we?

This weekend several of us headed down to Barton Creek, TX (Austin area) for our friend Natalie's wedding.  We stayed at the Omni resort and not only was the resort beautiful but the wedding itself was probably one of the top 3 I've ever been to.

Friday night we gathered for the "I DO BBQ"!  The invitation said western wear and yall know I was happy to bust out my cowboy boots!
The night was filled with amazing BBQ, an awesome slide show and several mexican martinis.

Saturday the girls left for their bridesmaid duties and headed to the pool solo.  I managed to lay out for a whole 2 hours without a magazine or book but then I got so bored!  I did however have an awesome lunch poolside.
That evening it was wedding time.  I never like to take photos during the wedding because I want to be able to enjoy every single moment.  I always turn and watch the groom's face when the bride walks in and I am never disappointed.  Natalie and Andy are very much in love and I am so happy for their new life together.  After the ceremony it was time to party!

The band was amazing and played such great music!  I'm pretty sure everyone but the drummer actually came down into the crowd at some point and danced with all of us.  It was a blast!

Sunday I headed back to D-town, got in a little pool time and got ready for this crazy busy week ahead of me!

Friday Roadtrip

Happy Friday!  Today is very short because I am roadtripping to Austin to watch one of my favorite gals tie the knot!  I still need to wash off this excess spray tan, pack and clean out my car so everyone can fit.  Also I have to have a donut at some point because it's National Donut Day, duh!

My Whole30 Journey

30 days ago I started out on a journey to challenge my mind, body and digestive system.  It was not easy but it was definitely worth it.  I had read about Whole30 on several different blogs and after one of my co-workers tried it, I decided I was in.  This is kind of a lengthy post so no hard feelings if you don't make it all the way through....we can still be besties :)

Why I did it
After starting a new job in the liquor industry, my life kinda changed.  I was out in my accounts eating amazing food and having amazing cocktails almost everyday.  Going from eating a homemade clean lunch everyday to eating burgers, steak, pasta and sushi (not to mention the alcohol) did a huge number on my digestive system.  I felt bloated and puffy all the time and while I was working out like a crazy woman, I was starting to see fat in places I had never seen it before.  I knew that something drastic had to be done and Whole30 seemed like the perfect solution.

What I ate
 Honestly everything I ate was delicious!  Almost all of my meals came from the Whole30 book and they will definitely stay in my rotation of things I cook.  I did find myself eating a lot more red meat than I normally did BUT I finally learned how to cook it.  I also ate more fruit than normal but I think I was trying to replace my daily dose of chocolate.  Generally my meals looked like this:


















































Breakfast
Usually a couple of fried eggs, lean ground turkey and fresh guacamole.


















































Lunch
Either the famous Whole30 protein salad or leftovers from the day before.


















































Dinner
I made everything from chimichurri steak kabobs to spaghetti squash with homemade tomato sauce, to grilled shrimp with pesto to ground beef "tacos".

How I feel
Lean and clean!  Honestly I have only felt bloaty a couple of times and that was usually because I ate too fast and too much.  While I never have felt the big energy surge that has been reported, I have felt like I make it through much longer days before I get sleepy.  However, my sleeping patterns haven't changed.  I still have at least 1 night a week where I don't sleep at all and I still wake up a lot of mornings wanting to crawl back into bed.

Changes I noticed
I will say I am disappointed that my energy didn't seem to change much.  A big energy surge seems to be a common thing everyone reports and for some reason I just never felt that.  I almost wonder if I ate too much fruit so my blood sugar never had a chance to regulate (who knows, I'm not a doctor or a dietician so I'm guessing).

Like I said above, I can tell I'm a lot leaner.  Those little patches of fat that had formed are not there anymore.  I don't own a scale so I have no clue how much weight I lost but I feel like I have lost at least an inch or two.  A friend of mine picked me up the other day and commented that I was a lot lighter than I was a month ago.  I'll take that as a huge compliment to Whole30 :)

I definitely would recommend Whole30 to anyone who wants to get a better handle on what they're eating.  It was a huge eye opener to see all of the things that I thought were healthy have so much sugar or other things in them.  I will definitely be reading my labels A LOT more closely.

Tips on Whole30
1. Don't say it's HARD
Like Melissa and Dallas say in their book "It is not hard.  Beating cancer is hard."  I have to agree with them.  The only time I thought it was a little hard was when I had to stare at my favorite dessert all night but even then it came down to my choices.  I chose not to give in and eat the dessert, I chose not to have champagne. Had it gone the other way, it still would have been my choice.

2. Be prepared
You have to cook A LOT.  Whether you prep everything at once or do a little each day, you will spend a lot of time in your kitchen.  Every week I would make a long list of everything I needed for every recipe that week.  I also kept a list on my fridge of every single thing that was inside.  This way when I ran out of an ingredient, I knew it immediately and didn't have any surprises when I started cooking.  Also, invest in a ton of tupperware.  You'll use it, trust me.

3. Inform your friends and family
I told everyone in my life that I was doing this.  I was honestly a little surprised that I didn't catch more hell for it.  I never heard "Oh come on! Just one bite" or "Just 1 drink won't hurt you".  My friends were all super supportive and my sweet mom almost missed out on dessert because she didn't want to eat it if I couldn't.

4. Stay positive
You have to keep your eyes on the prize and remember why you started this journey in the first place.  This way when you get to Day 20 and you really want that piece of pizza, you'll be a little less tempted.  This last weekend was probably that hardest for me because I could see the finish line.  I kept finding myself thinking "One cookie would be ok" but there was no way I was going to let myself get this close and not reach my goal.


Whew...I feel like I could go on and on but I just want anyone that is interested to have the details from my experience.  My plan now is to continue eating Whole30 based recipes with a few little treats every now and then.  I am really enjoying the way I feel on the inside and the changes on the outside are a nice bonus!

Weekending: So Much Relaxing




































Well it's Monday once again but you know what?  This Monday is just slightly better than most because it is finally SUNNY in Dallas!  After weeks and weeks of rain and gloomy weather (not to mention the flooding) we are finally getting a break.  PTL!  Also today is my LAST DAY of Whole30!  I can't wait to share more about that tomorrow.  Linking up with my favorite Boston lady, Biana today.

I wish I could say that this weekend was spent doing amazing things but it was pretty uneventful (which was really nice).  Friday night I made a Whole30 version of "fried rice" out of cauliflower and veggies and it was amazing.  Saturday morning I had to get a biometric screening (AKA blood drawn) for work.  Always a fun start to a morning.  After that was done I drove out to Frisco to meet up with my aunt and uncle for a bit.  They were in town for the Jimmy Buffet concert which is a HUGE deal out here.  People camp out in their trailers for the weekend and it is basically a 2 day tailgating event.  We walked around so we could see everyone's set up but I only managed to get a couple of photos.





































Sunday I worked at the barre studio and got a great class from Taryn.  Holy seat work!  The rest of the day was spent relaxing and cooking.
