That first salad sounds amazing. I recently got a spiralizer and have been experimenting with so many different zoodle and veggie noodle recipes so it has been a lot of fun. I am with you, I can only eat foods that I enjoy. I refuse to force myself to eat something gross. Life is too short for that!
