Roasted Brussel Sprout Salad

With 2015 just around the corner I have been looking for healthy recipes that still make my tastebuds happy.  One thing I have been lacking on lately is getting all of my greens in but the thought of drinking a green juice daily just doesn't always appeal to me.  Over thanksgiving my cousin posted a picture of a brussel sprouts dish she made and I literally started drooling.  I love brussel sprouts and new I wanted to try my hand at her recipe.  I made a few tweaks and think I have it down!  This "salad" is the perfect blend of savory with a touch of sweet and the red and green colors are perfect for the holidays.

Roasted Brussel Sprout Salad





































What you'll need:

2 handfuls of brussel sprouts
1 package of Craisins
1 small package of pine nuts
Turkey bacon
Olive Oil
Balsamic

What You Do:

1. Fry about 3 strips of turkey bacon. Crumble and set aside.
2. Cut off the stem of the brussel sprouts then separate all of the leaves.
3. Drizzle olive oil into a skillet and saute brussel sprout leaves on medium heat for about 5 minutes.
4. Add a couple of handfuls of Craisins to skillet with brussel sprouts.
5. In a separate skillet toast the pine nuts being careful not to burn them.
6. Once brussel sprouts start to slightly brown add salt and pepper and pine nuts.
7. Drizzle balsamic onto salad and saute for another 5 minutes.
8. Remove from skillet and enjoy!
**You can also add cheese if you want to be a little sneaky**

  2. I've only had Brussel sprouts once and i've never cooked it because i heard they have to be made perfectly or they loose their good taste so i'm scared - but I'll try it for you! xo, Biana - BlovedBoston

  4. Well, this salad certainly looks pretty! I am typically not a fan of brussel sprouts but I do love balsamic vinegar enough that it could probably make up for it!!

  5. my husband loves brussel sprouts (i could take or leave them) so this looks great! when i need more greens, i put spinach in everything. literally everything. sandwich? chuck some spinach on. stir fry? chuck it in, the spinach will wilt and you won't even taste it. spaghetti, same thing. it's brilliant!
