Weekending: Bell's Brewery, Starfarm, and Recipes

Ohhh it's Monday once again.  I don't know about y'all but I had a major case of the Sunday Sads yesterday that I just couldn't shake.  They just seem to go by so fast!

Linking up today with the Biana and Meghan!

Friday night a few of us headed downtown to Bell's Brewery.

I've only been one other time so I was excited to check it out again.  This place has a huge beer garden, a main room, and a room with a stage.  As much as I loved the beer garden, we were there to see a band so we hung out inside all night.  The band we went to see is called Starfarm and they are an 80's band from Lansing, MI.  You all know how I LOVE my 80's music!  They put on a great show and played everything from Journey to Madonna to Queen and more!  Such a fun night!

Saturday I spent most of the day in bed with a stomach bug.  I'll spare you those details.

Sunday I felt MUCH better and spent the whole day in the kitchen.  Michigan and I decided that we didn't need much food since we are heading up to the lake Wednesday night.  We picked 3 different recipes from Pinterest and I got to cooking.  PS why on earth when we decide we don't need much food, do I still spend the day cooking?  Good thing I love it!

Here's what I made:

via

Mexican Chopped Salad which is PERFECT for summertime!  It's light and super easy to make.  You seriously chop up corn, onion, avocado, pepper, cilantro, tomato, and mix in a few black beans.  The dressing is super easy too.

PF Chang's Chicken Lettuce Wraps.  I have been wanting to try making these for awhile and I have to say they were a success!  I doubled the sauce and used ground turkey instead of chicken but the results were delicious.  I will admit though, they aren't exactly a copycat recipe.  Something about the sauce is off but I can't figure out what it is.  Oh well….these will make a great lunch!

Tonight for dinner I am making these bad boys!

Tuna Melt in a Tomato.  I don't know how I haven't seen the The Pescetarian and the Pig before but I for sure will be going back!  She has some fabulous recipes!

I hope you guys had a great weekend!

  3. I have heard from several other people who had a stomach bug this weekend! That's stinks.. I'm glad you were feeling better quickly. All three of those recipes look delicious! I made a turkey lettuce wrap recipe once that ended horribly... I think I'd ready to try again though.. They just look so good!!

  4. Bell's is my brother's favorite brewery, I keep meaning to check it out when I'm in town but I always forget! My favorite is in Grand Rapids—Founder's. If you haven't been, I highly recommend it!
