Dear Monday

Well here we are at Monday again.  No matter how much I want it to, the weekend just doesn't last long enough.

Friday night we went to see Guardians of the Galaxy.

As much as I love superhero movies I did not love this one.  I actually fell asleep twice.  Whomp whomp.

Saturday we headed up to Mt. Pleasant for the Journey concert.  We drove around so Michigan could look at his old college campus and grabbed a drink at his old hangout.  The concert was at the Soaring Eagle casino so we got there a little early to watch some of the Michigan State/Oregon game and do a little gambling.  The concert was amazing and as always, I sang at the top of my lungs!

I spent a lot of time in the kitchen yesterday making 2 news recipes.

This recipe is such a great way to finish up summer veggies.  The chili is really light so it's perfect while the weather is still warm.

Yall this smelled so good the whole time it was cooking (which was only like 20 minutes but still). I left out the mangoes and the cashews because I wasn't sure how that would taste.  The sun dried tomatoes paired with the salty pancetta were awesome.

Well that about sums up my weekend.  This week will be filled with lots of packing and training my replacement at work.  Only a few short weeks til I'm back home :)

  2. oh that sucks you didnt enjoy the movie - i liked it, but i didnt love it, and it was a bit cliche at times but overall i liked it. that chili looks amazing :) yum!

  3. The funny thing is, I LOVE Monday's! My kids both have school on that day and I can recharge from the weekend and get stuff DONE;)
