This salad has 2 of my favorite things: shrimp and avocado and it actually introduced me to the wonderful sweetness that is pomegranate seeds! I completely thought that pomegranates were a summer food but apparently they don't really come around until fall.
Because I can't leave things well enough alone, I naturally did my own take on this recipe and wanted to share it with yall today.
Superfood Salad
What you'll need:
-1/3 cup red onion, chopped
-1 orange, peeled and segments chopped
-1 avocado, chopped
-1 cup canned black beans, rinsed
-1 cup pomegranate arils
-1 cup frozen corn, thawed
-1/3 cup cilantro, chopped
-salt & pepper
-1 clove garlic, chopped
-1 cup raw shrimp
-1 teaspoon coconut oil
The original recipe calls for quinoa but I leave it out sometimes depending on my mood.
The original recipe also calls for a lemon vinaigrette but I personally thought that it was too much and ended up covering up these amazing flavors.
-Peel and chop oranges, red onions and cilantro and add to large mixing bowl.
-Cut pomegranate in half and remove seeds. Add seeds to mixing bowl with oranges, onions and cilantro.
-Melt 1 teaspoon coconut oil in a skillet over medium high heat (you can also use olive oil).
-Add garlic and cook for 2 minutes until fragrant.
-Add raw shrimp and cook for 1-2 minutes on each side until pink (I squeezed a lemon wedge over mine).
-Add cooked shrimp to a large mixing bowl.
-Empty black beans and corn into a pan and season with salt and pepper. Cook until tender and then drain.
-Add beans and corn to mixing bowl with shrimp.
-Mix ingredients thoroughly.
-Add avocado before serving. Serve cold or at room temperature.
-Enjoy the explosion of flavors in your mouth.

this looks amazing. i have definitely overdosed on salads this summer and am looking forward to comfort food.. but maybe one more salad couldnt hurt! i love quinoa but not in salads / cold food, i think it's a bit weird!
